How to froth milk perfectly? Pour cold milk into the jug. Remember not to use too much – the frothed milk will double in volume, so it needs some space. Slightly tilt the jug and insert the nozzle – it should be just below the surface of the milk. Turn on the appliance and froth the milk using circular movements with the jug. The nozzle should always be just below the surface. Once the milk is frothed and has increased in volume, move the nozzle a little deeper to heat the bottom layer of milk. The ideal temperature is around 65°C – 70°C. At this temperature, the lactose in the milk dissolves, giving it a sweet taste. Higher temperatures will curdle the protein and prevent you from frothing. Baristas sometimes use special thermometers that they insert into their jugs. You probably don't have one, so simply stop heating when the jug becomes uncomfortably hot. Finally, tap the jug to allow the bubbles to subside. Done!
