Ingredients: 1 lb raw shrimp 3-4 cups vegetables (1 cup sliced red onion, 2 1/2 cups fresh kidney beans, 2 tablespoons capers, 1/2 cup mixed olives, halved) 2 tablespoons oil 1/2 cup plain yogurt 1/2 teaspoon honey Directions (Oven): Preheat oven to 400ºF. Prepare 2 teaspoons. Mediterranean Lemon Seasoning, Lemon Herb Yogurt Sauce (see below) in a single packet. Place shrimp and vegetables in a bowl with oil and seasonings. Bake on a sheet pan for 8-12 minutes until shrimp are cooked. While shrimp is cooking, make the sauce and refrigerate until ready to serve. Directions (Air Fryer): Cook seasoned shrimp and vegetables in a 4-6 quart air fryer at 400ºF for 6-10 minutes according to the air fryer instructions. Follow the cooking and seasoning instructions in the oven recipe. Sauce: Mix 2 teaspoons of Mediterranean Lemon Seasoning with Plain Yogurt and Honey. Drizzle the sauce over the meal.
